N\u00e5r cellulase angriper HPMC, angriper den f\u00f8rst og fremst de ueterifiserte glukoseenhetene i HPMC-strukturen. HPMC er en line\u00e6r polymer, og viskositeten synker kraftig n\u00e5r en glukoseenhet blir skadet. Slike enzymer har imidlertid vanskelig for \u00e5 bryte ned molekylkjeden hvis glukoseenhetene er eterifiserte.
