Esistono alcuni metodi comuni per misurare la viscosit\u00e0 dell'HPMC, tra cui Brookfield, Hakke e Hoppler. Gli strumenti, le concentrazioni di soluzione e gli ambienti di prova coinvolti in questi metodi sono diversi. Quando la cellulasi attacca l'HPMC, si rivolge principalmente alle unit\u00e0 di glucosio non eterificate nella struttura dell'HPMC. Essendo un polimero lineare, l'HPMC subisce un brusco calo di viscosit\u00e0 una volta danneggiata un'unit\u00e0 di glucosio. Tuttavia, tali enzimi hanno difficolt\u00e0 a degradare la catena molecolare se le unit\u00e0 di glucosio sono eterificate.
